Homemade cherry pie from fresh picked cherries!

Here it is: the cherry pie I promised to share with all of you a few weeks ago!

The quick story: my parents live on a farm in Nebraska and every summer we pick the cherries from the old tree in the orchard and then sit for hours and hours and hand-pit the cherries. It’s then my job to bake the best cherry pie ever!

The secret….it’s in the cherries!

Okay, here’s the recipe:

4 cups fresh pitted sour cherries (or frozen if you don’t have a tree in your backyard…and please don’t steal them from your neighbor’s backyard)

3/4 cup sugar (or, 1/2 cup sugar and a packet of Stevia)

1/4 cup cornstarch

Place all ingredients in a saucepan on medium heat until it gets nice and thick.

Pour this filling into a prepared crust and top it with another crust. Pinch edges and sprinkle with a bit of sugar. Place in preheated oven at 425 degrees F for 15 minutes. Reduce heat to 375 degrees F and bake for 35 minutes or until the top is golden brown.
