The Famed Blueberry Birthday Cake [this one is super easy]

Anyone looking for a super tasty cake to add to their recipe box? How about a super easy cake? A real looker? A cake you want to enjoy with some good company and cup of coffee? Here’s the one for you:

This is the writer's favorite and only birthday cake! We eat it once a year...

First, gather the ingredients:

  • one box yellow cake mix
  • 1 cup sugar
  • 1/2 cup powdered sugar
  • 8 oz cream cheese
  • 1 container Cool Whip
  • 1 can blueberry pie filling (or blueberry pie filling recipe, see below)

Step One: whip up that yellow cake mix and bake it in two 9 inch round pans. Let cool.

Step Two: Beat sugars and cheese well. Fold in Cool Whip. Place yellow cake layer number one on pretty cake plate or stand. Spoon 1/2 of the filling you just whipped up on to the cake, spread evenly and over the sides if you choose. Now spoon half of the blueberry pie filling on top of the fluffy filling.

Step Three: Place the second yellow cake layer on top. Spoon remaining fluff and spread evenly. Spread the remaining blueberry pie filling on top and let drip down the sides. Place cake stand lid on top (if you can : ) and store in fridge. Cut and enjoy!

Now, if you are like me and would like to prepare your own blueberry pie filling rather than buying a can, follow these instructions and then eat the rest of the frozen blueberries on your yogurt for breakfast!

Blueberry Pie Filling:

  • 2 cups fresh or frozen blueberries
  • 1/2 cup sugar
  • 1 1/2 T cornstarch or 3 T flour
  • 1/4 tsp each cinnamon & nutmeg
  • 1/2 cup water
  • 1 T lemon juice

Mix dry ingredients in medium saucepan and add water gradually. Bring this to a boil and add blueberries. Cook 3-4 minutes until it thickens up, stirring constantly. Remove from the heat and mix in the lemon juice. Allow to cool. Use on cake when cool or place in refrigerator until needed.
